We are all busy and sometimes have no time to prep. What I find very easy even if not time to really prep. Always have zucchini, squash, onion, and mushrooms on hand. Cut them up and store in steam able bags. You can always microwave them and add them to what ever left over meat (protein) you had for dinner the night before.

By far one of the easiest and delicious lunches.
I get H-E-B broccoli slaw microwave as directed, turkey meat with bell peppers (left overs) and Tabasco hot sauce. Mix it in a big ass bowl, and it's go time.
Grilled chicken tenders/breast on hand?
Recipe#1 Grilled chicken pizza (great idea for the kids)
Whole wheat(pre made) pizza crust.
1 can 8oz tomato sauce ( simmer in sauce pan and add seasoning: garlic powder, dried oregano, pepper to taste)
mozzarella cheese
onions sliced
spinach
garlic powder
dried oregano
pepper
extra virgin olive oil
Pre heat your oven at 350
brush olive oil on both sides of your crust
spread tomato sauce on crust
top with your spinach, grilled chicken, onions and bell peppers.
back for 15 minutes.
add your cheese and continue to bake for 5 minutes.
Your pizza is done! Enjoy.
Recipe #2 Grilled chicken sandwich
***Using the left over spinach, onion, and chicken***
***use left over mozzarella cheese***
Saute your onions with alittle sugar
Use any fresh baked bread and toast in oven
when toasted to your liking removed add cheese to you bread
add sliced chicken spinach and onion
add honey mustard for added flavor
Recipe # 3 Parmesan and Panko crusted chicken breast
(Using chicken breast that was cut in half)
Tenderize your chicken breast halves- set aside
In a small bowl mix 3 egg whites and 1 whole egg together
In a separate bowl mix 1 cup panko and 1/2 cup low fat Parmesan cheese.
Dip chicken in egg mix and then in panko mix. Cover completely place on cookie sheet.
Continue with the rest.
Bake covered for 25 minutes and then uncover.
Add some couscous, steamed veggies or brown rice.
Recipe # 4- Egg, sweet potatoe and chicken
Need a great protein packed Breakfast with chicken.
Cut sweet potatoes into small squares.
Cut chicken into small pieces
In a small pan heat tsp of olive oil. add potatoes and cook til tender.
Add chicken pieces til warm
Add your eggs and cook.
Have extra chicken and need a quick meal for the night.
This is a great and fast meal.
Recipe #5 - Spinach, Cucumber Salad
Great for those hot summer afternoons.
A great spinach, cucumber ( soaked with vinegar) chicken breast ( think easy, use left over grilled chicken) and sprouts. No need for dressing as the vinegar from the cucumbers will more than add great taste.
Recipe #6-Grilled Chicken with brown rice
Grilled chicken brown rice and low sodium black beans.
Make sure to soak the canned beans to reduce the amount of sodium intake.
REMEMBER MAKE IT SIMPLE.
SPAGHETTI SQUASH AND CHICKEN
Next time you are at the grocery store pick up a spaghetti squash
You will want to cut the squash long ways and clean it out. Bake on a cookie sheet for 30 minutes or until tender. Cook in a pre-heat oven at 325. ***LEAVE OVEN ON PRE-SET***
While that is baking chop your left over chicken and veggies. I choose to saute onions and green bell peppers. When you have your veggies tenders add your chicken and cook til heated.
Once your squash is done let cool.
With a folk scrape your squash out. Will look just like spaghetti.

Who does not love veggies. They can be added to anything to make a dish even more favorable. Once again these are things that I had in my fridge and even made my breakfast dish with the squash.
This dish is the veggies you see here with fettuccine pasta.
2- zucchini
2- squash
1 -red bell pepper
1 tomato
1/2- a white onion
2- garlic cloves
1- spicy jalapeno
2-Tablespoons grape seed oil
1- Tablespoon Apple Cider Vinegar
Add your grape seed oil |
